Alpha-amylase Characteristics

Heat endurance: The effective temperature range is 55-105 and the optimum temperature 85-100. When it is lower than 55℃, the reaction is slow, so it needs to extend the action time. When it is higher than 105℃, it can still maintain a considerable vitality. In the spray liquefaction, it can tolerate the instantaneous temperature 110-115℃.
PH stability: It is stable at pH5.0-8.0 and the optimum pH is 5.8-6.5.
Low calcium dependence: This product does not require high calcium concentration, and 50-70 ppm calcium can be used in tap water or groundwater production without additional calcium ions.

Alpha-amylase Usage

1.Application in bait sugar, enzymatic monosodium glutamate, fermentation industry: The starch syrup concentration is 16-20 Be, adjusting PH to 5.8-6.2 and adding original enzyme 0.6 L (40,000 units) to each ton of raw material. When intermittent liquefaction is adopted, the temperature in liquefaction tank rises rapidly to 95-100 ℃, and the temperature is kept in liquefaction for about 30 minutes; When spraying liquefaction is adopted, the temperature can be around 105 ℃ and hold for 60-120 minutes at 95 degrees.

2. In the brewing process of beer, the excipients in the gelatinizing pot are mixed evenly with the ratio of material to water of 1:3-5, adding 0.3L (20,000 units) of original enzyme per ton of excipients, heating up to 92-97 C, maintaining 20-30 minutes, and heating up to 100 ℃ and holding temperature when the color of iodine test becomes reddish-brown.

3. In the production of alcohol industry: Add 0.3L (20,000 units) of original enzyme to each ton of raw material, adjust pH value to 6.0-6.5, mix well and pump to the cooking pot or continuous cooking heater. The temperature is controlled at 100 ± 5 degrees, and after 100 minutes of heat preservation, saccharification is carried out.

4. Textile desizing: In enzymatic desizing process, the dosage of original enzyme is related to fabric structure, sizing amount and adopted technology and equipment, and should be optimized through experiments. The usual experimental conditions are: the dosage of impregnation method is 2-6 g (mL) / L, the pH is 6.0-7.0, and the temperature is 85-95 C steaming for 20-40 min; The amount of steam method is 4-10 g(mL)/L, and steam for 10-20 min at pH 6.0-7.0 and temperature 95-105 C.
