Applications Of Mesothermal Alpha Glucoamylase

Mesothermal alpha glucoamylase is a kind of amylase prepared by Bacillus subtilis through deep fermentation and modern extraction and drying technology. It can hydrolyze starch into short dextrins and small amounts of low molecular sugar, glucose and maltose. It is widely used in starch sugar, alcohol, brewing, textile, printing and dyeing, paper and other industries.

Definition of enzyme activity of mesothermal alpha glucoamylase: 1g of solid enzyme powder or 1 mL of enzyme solution, under 60 C and PH6.0 conditions, 1g of soluble starch liquefied in one hour is an enzyme activity unit (U).

Working mechanism: Starch, a highly carbohydrate polymer, is composed of two polysaccharides, amylose and amylopectin. Starch substrates (such as corn starch) require stable thermoamylase to produce short-chain dextrins. Glucose amylase is mainly used in the hydrolysis of glucose syrup, high fructose syrup and starch used in alcohol production. Amylase (internal alpha-1,4-glucose starch hydrolase) can hydrolyze starch into short dextrins and a small amount of low molecular sugar, glucose and maltose endonucleases, so that the viscosity of starch paste decreases rapidly.

Applications:
1. Textile industry: Mesothermal alpha glucoamylase is used as desizing agent. It is suitable for desizing silk, chemical fiber and cotton wool fabrics which are not resistant to high temperature. The dosage of enzyme is 2000 u/g, and the water bath is 60-80 C for 30 minutes.
2. Fermentation industry: Starch pulp concentration is 16-17Be. PH is adjusted to 6.0-6.5, adding 0.2% calcium chloride (according to raw material weight), adding amylase (8-10u/g raw material), mixing evenly, holding 60-80 C, and liquefying for 30 minutes.
3. Brewing industry: When using rice and maize as raw materials, grind more than 40 mesh of powder first, add amylase (8 u/g raw material) after sizing, mix evenly, keep 60-80 C, liquefy for 30 minutes.
Storage conditions: Under different storage conditions, the enzyme activity of the product was 5-10% loss at 4 C and 10-15% loss at room temperature for 6 months. It should be stored in low temperature and dark.
